Persian Cucumber and Cherry Tomato Salad

So simple, this little side dish almost can’t be considered a “recipe.” But sometimes I post things on my blog, well – most times I post things on my blog just so I can remember what I made so that I can make it again, and also share simple thingsto give others ideas as well. Have you ever started to think, “What am I going to make when so and so comes over for dinner?” or say to yourself, “I’m so tired of the same old salad…” Well, I do that all the time, and then my blog (and other food blogs) help remind me how easy the best dinners/dishes can be!

Jasmine and I went running this morning so we wanted a light and healthy lunch. I pan-seared and cooked a few center cut pork chops and made this simple side salad with persian cucumbers and sweet cherry tomatoes. I go crazy over little persian cucumbers that are so crunchy and seem to pick up the flavor of any dressing than regular cucumbers.

So here’s what you do. Just slice the cukes and toss in a bowl with the tomatoes. Splash in a little red wine vinegar and olive oil and give them another toss. Then sprinkle with a pinch of kosher salt, some black pepper – and then a few shavings of a hard italian cheese. I used asiago (not so hard, but delish)!

Serve as a mid afternoon summer snack or with any meal at lunch or dinner.
