I’ve heard people say they don’t get motivated to cook for themselves – but I’ve never understood that! After cooking for my family for years, it’s such a fun thing to prepare something just for myself because I can make it just the way I like it, without worring that this person doesn’t like that, or how much I need to make, etc. A couple days ago, I made this gorgeous sandwich based on ingredients I love. I wasn’t sure how it would turn out, but the combo is a winner. I wanted to make sure to blog about it so I can share it – and so I’ll remember it when I want a delicious and impressive sandwich for myself and for someone I love. If you happen to live in the Bay Area, there’s a wonderful bakery called Gayle’s in Capitola that sells Pumpkin Seed Bread (and a lot of other great things), these little rolls of healthy delishishness. This was one of the great things about this sandwich, so whatever you do, make sure the bread is as exciting as the middle – it’s a double whammy!
Ingredients
Chicken breast, cooked and roughly chopped
1/2 red bell pepper
about 5 leaves fresh basil, rougly chopped
about a tbls (more or less) mayonnaise
1/4 tsp fennel seed, (I like them whole but you can crush a bit)
pinch turmeric
pinch paprika
kosher salt and black pepper to taste
Your favorite bread, toasting is optional (I prefer it that way)
Preparation
Simply toss all ingredients in a mixing bowl. Wow, this might be the easiet post I’ve ever done!! : )
Pile high on your favorite bread.
Serving suggestion:
This is a really easy and satisfying light dinner, but of course would make for a wonderful lunch! I’d serve open-faced since it’s so pretty with a handful of your favorite potatoe chips piled next to it!
