Prep Time – about 20-30 minutes
Ingredients
Dressing
A little of each of the following:
tamari or soy sauce
extra virgin olive oil
rice vinegar (I use brown rice vinegar, but you can use your favorite light vinegar)
Optional – add a little bit of wasabi
Preparation
– After the peas have been shelled, cook peas in hot water for just a minute or two until tender. They cook very fast! Drain.
– Toss the cooked rice, edamame and cooked peas together in a medium bowl.
– Splash in a little oil, vinegar and tamari. Use very little of each and taste. If you want it more savory, add more tamari, more tart – add a little more vinegar, etc.
– To serve, you don’t have to, but you can gently push the salad into a small bowl or mold and flip over gently on to serving plate. It’s an attractive way to serve this salad.
Optional:
I wrapped this rice combo in roasted seaweed and enjoyed with a little wasabi dressing. I would totally recommend it! Check it out – you should try it! What a tasty and healthy dish or snack
