Sweet Rice Pudding with Fresh Strawberries

I’ve never been a pudding person, but tonight I wanted to make my favorite four-year-old twins dessert, and my heart was set on using the yummy fresh strawberries I bought yesterday. I didn’t feel like baking, so I headed to the stove to take my best shot at rice pudding – and boy am I glad I did! Turns out I really like rice pudding! Oh, and I hope my son, his girlfriend and the twins enjoyed it too. If you’ve never made pudding before, try it – it’s easy!

Ingredients
1 cup white rice (I used medium grain Japanese rice), rinsed thoroughly
2 cups whole milk
2 cups half and half
1/2 cup sugar (more or less, adjust to taste)
1 lb California strawberries
pinch of cinnamon

Preparation

Add rice and 2 cups of water (with a pinch of salt) to a small heavy bottom pot and bring to a boil. Once it reaches a boiling point, turn to low and cover for about 15 minutes, until most (but not all) the water has evaporated.

Add the milk, sugar and half and half. Give it a stir, turn the heat up. Simmer on medium heat and stir often to prevent the rice from sticking or the milk from burning. Simmer this way for about 20 minutes until it’s beginning to thicken. Taste it, add the cinnamon and add a little more sugar if you’d like it sweeter. Continue to simmer on low for another 10 or 15 minutes until it’s nice and creamy. Remove from heat, add the vanilla extract and give it another stir. It will thicken further as it cools.

While cooling, rinse, pat dry and chop the strawberries. Cover the strawberries lightly with sugar and let sit for at least 30 minutes in a small bowl. Spoon rice pudding into individual glasses to cool further. Refrigerate if desired. When ready to serve, spoon strawberries over the top of the pudding.
Serving Suggestion:
Dig in after you top with strawberries, or chill further. You can also drizzle with heavy cream.
