It never fails that the healthier I eat, the more I crave healthy foods. Yesterday my daughter Jasmine and I kicked off 30 days of eating only healthy foods we love. We had that great fennel and citrus salad I posted yesterday, among other yummy food. This morning for breakfast I tossed together some veggies with crumbled tofu, add a little curry powder and voila – we had this delicious, filling breakfast scramble that’s packed with good stuff.
So this is just a simple and healthy breakfast food in case you’re tired of the same old, same old. I hope you’re off to a healthy start in 2011 too!
Garlic Girl’s Tofu and Veggie Morning Scramble
Serves 2
Ingredients
1/1/2 cups firm tofu, crumbled with your fingers (I think that’s the best way. Also I use Wildwood brand).
2 zucchini, finely chopped
1/2 onion, finely chopped
2 cloves fresh garlic, minced
1 handful cherry tomatoes, chopped
1 teaspoon curry powder
salt and pepper to taste
pinch of cayenne pepper (optional)
1 tbls olive oil
1 to 2 slices whole wheat pita, sliced in half (vertically)
Preparation
In medium skillet, saute onions, garlic and zucchini in olive oil for about five minutes on medium heat. Once veggies are softened add the tofu, tomatoes, curry, salt and pepper (and cayenne if you’re adding) and saute another few minutes until heated through.
Toast halves of pita bread. Open pocket and fill with scramble mix.
Serving Suggestion:
Great for breakfast or quick healthy anytime meal.
