When I was a teenager my mom would call me down to the kitchen every evening before dinner was ready and I never had to ask what she wanted; I just got straight to work, making a huge salad in a large wooden bowl for me, my mom, dad and three brothers. And it was always the same: Iceberg or Romaine lettuce, cucumber, tomatoes and celery, tossed with olive oil, vinegar, oregano and a little fresh lemon. For some reason, it never seemed boring to me and always tasted delicious, especially the part when I would literally drink the vinaigrette that was left in the bottom of the bowl (turning my bottom lip white) after everyone had been excused from the table. I can write a book about why I was the last one left at the table, cleaning the entire mess every night (hint: old school Sicilian mother), but this post is about salad. : )
Anyway, as much as I love a simple salad tossed with olive oil and vinegar, I am currently enamored with adding strawberries to salad and changing things up a bit. This pleasant and fresh combination of endive, strawberries, red onions and mint is such a lovely way to enjoy salad and stay healthy. If you’ve not added strawberries to your salad yet, or concocted an endive salad, you’ve got to try it. The endive is typically on the pricey side, but it is SO worth it! I even love curly endive (which is not so pricey), sauteed with a little garlic and olive oil, YUM!
Strawberry Endive Salad with Tamari Lime Dressing
Ingredients
- 4 heads Belgian endive cored and leaves separated
- 1/2 red onion sliced lenghtwise
- 2 cups California strawberries love the size, texture and sweetness
- 5 fresh mint leaves finely chopped
- 1/2 lime
- splash of Tamari
- splash of extra virgin olive oil
Instructions
- Toss endive, onions with tamari, olive oil and lime juice. Add the strawberries and toss gently. Arrange on plate and garnish with mint.
