I love to soak chia seeds overnight to create a chia “pudding,” but sometimes I don’t like to wait that long for the seeds to become soft. Lately I’ve been saving time by pouring hot water over the seeds instead. This method definitely saves time and produces the same result.
These little bloated chia seeds add extra texture and excitement to snacks like smoothie bowls, but I especially enjoy adding a layer of chia pudding to breakfast parfaits. Chia pudding parfait combinations are limitless!
For the last couple weeks I’ve been working away from home and I’m totally feeling like I’m in a health rut. Today I decided to put an end to my rut and focus on eating healthy foods for a while until I can get my little groove back.
How to Make Instant Chia Pudding
Making instant chia pudding could not be simpler.
- Add chia seeds to a heat-proof bowl
- Bring water to a boil.
- Pour hot water over the chia seeds.
- Let cool for at least 15 minutes.
- Stir in sweetener.
If you prefer your chia pudding with nut milk, just heat the milk in a small pot and remove right before it begins to boil, and then pour over the chia seeds.
To sweeten the pudding, I recommend adding honey (or your preferred sweetener) after the pudding has cooled. Adding the sweetener afterward makes it easy to taste and add just the right amount of sweetness.
Chia pudding is delicious with various toppings, such as berries, coconut, nuts, oats – or just served with a little milk and honey. I love to stir them into smoothies and don’t even care that sometimes they get stuck in my teeth!
How to Make Instant Chia Pudding
Ingredients
- 1/4 cup chia seeds
- 1 1/2 cups water
- 1 cup raw oats
- 1/2 cup vanilla greek yogurt
- 1/4 cup cashews
- 4 chopped strawberries
- 1/4 cup fresh or frozen blueberries
- 1 tablespoon honey
Instructions
- Cook oats according to package directions; set aside.
- In small heat-proof bowl, add chia seeds.
- Bring 1 1/2 cups water to a boil; pour over chia seeds. Let cool for at least 15 minutes.
- In small parfait cup or mason jar, spoon in half the oats to create first layer of parfait. Drizzle with a teaspoon of honey. Add half the strawberries, and then 1/2 the yogurt.
- Spoon about a tablespoon of the chia pudding on top of the yogurt.
- Garnish with blueberries, more yogurt, and then sprinkle with cashews and a pinch of raw chia seeds (optional).
- Optional: For a sweeter parfait, add a bit more honey between the layers.
