You don’t need to be a skilled cook to whip up this easy mini omelet soufflé. I used to think it had to be hard to make any soufflé, but one day I proved myself wrong when I beat together eggs, egg whites, milk, a little cheese, threw it in the oven.
My quick soufflé turn out fluffy, tall and tender, just the way I like it . You can do the same in a just a few minutes. Not only that, you can add just about any of your favorite ingredients for your very own signature soufflé omelet.
I was a little surprised I didn’t need to use my electric mixer, or add cream of tartar, or doing any folding of whipped eggs. Maybe there are reasons for all that, but I happened to think this simple method worked great!
I’m not typically a big breakfast person and I typically like to work out before I have anything to eat, but this morning was different. It could be because I didn’t sleep very well last night thinking about all the things I need to accomplish between work and just life. I guess it’s easy for me to just default to messiness in my brain with my list of goals always dancing around in my mind.
And I guess that could be called worry – and worry sucks. Doesn’t it?
Mini Detour on Anxiety
It’s interesting that many of us feel the need to tell the people around us how much we worry about so many things, especially when we know it’s unhealthy for both our minds and our bodies. It’s almost as though it makes us feel like we’re caring if we’re worry about things – especially things we have zero control over. Let’s take the weather for example, specifically the rain for instance. Don’t get me started. The point is, it’s not true that we’re more caring if we worry, we’re just stressed.
As a believer in the Almighty God, t’s very comforting to know how many times scripture tells us to not worry, and why. The bottom line is that He is in control and we are called to have faith that God is the beginning and the end of EVERYTHING and that His will for our lives will be done. I love what Billy Graham said about worry: “Anxiety is the natural result when our hopes are centered in anything short of God and His will for us.”
I wish I could live with that understanding all the time, but it’s so easy to get distracted.
So for now, I’ll try to stop worrying about tomorrow and just share this Easy Mini Omelet Soufflé with Asparagus.

Easy Mini Omelet Soufflé with Asparagus
Ingredients
- 6 eggs
- 4 egg whites
- 1/2 cup sharp while cheddar shredded
- 1/3 cup half & half I used fat-free
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon fresh or dried parsley
- 2 small garlic gloves; crushed
- 6 stalks asparagus
- 1 tablespoon extra virgin olive oil
- 1 tabelspoon butter
- 1 tablespoon roasted bread crumbs
Instructions
- Heat oven to 375 degrees F.
- Heavily grease large muffin tin with olive oil and butter.
- In heavy-bottom pan, saute aspargus on high heat for a few minutes until slightly tender and a bit charred on the outside; set aside.
- Optional: Toast bread crumbs on cookie sheet for a few minutes in the oven until medium golden brown.
- In small mixing bowl, whisk together eggs, egg whites, salt, pepper, parsley, garlic and half & half for about one minute, until well combined.
- Spoon mixture into indidual muffin cups to 1/2 full.
- Place a couple halved asparagus pieces in cups; sprinkle with bread crumbs.
- Bake for 20 minutes. Be sure to check sooner. They are ready when they have risen and the tops are light, golden brown,
