If you have a head of cauliflower in the fridge and you’re wondering what to do with it, here’s an easy and delicious recipe for you.
I’m a huge fan of cauliflower, but I don’t always love it if it’s not cooked right. In my opinion, the less steps it takes to prepare this versatile veggie, the more I love it. Some of my very favorite ways to enjoy cauliflower takes less than thirty minutes and includes only a few key ingredients.
The last couple weeks I’ve been focused on eating more whole foods while also trying to avoid those comfort foods that end up making me uncomfortable (how ironic). It seems that I resort to eating “comfort” food when I’m not in a very good place emotionally, or when I feel like I’m just off my game and making poor choices for myself. It’s almost like, “Hey, let me just sabotage myself in every way since I’m already messing up.” Not a good strategy. :/
Fortunately, because of my faith in God, and my relationship with Jesus, I can always find my way home. It’s so good to know that in this confusing world, filled with traps and snares and twists and turns designed to destroy us, that there is unchanging truth to turn to. It’s so refreshing and comforting to know that when we stop trying to force our own will and way, and simply rely on God, that we can find that peace and joy that surpasses all understanding in every situation, every time.
Ask the Lord to Guide You
If you’re reading this, and you happen to be struggling in your heart and you’re not sure which way to turn, just turn to the Lord. Get on your knees and just ask Him to guide you, to take the burden from you, to soothe your soul and He will do it.
Of course that’s the starting place, but it’s a really great starting place. For me, it’s praying and crying to God. It’s also many other things, like confirming the truth by reading scripture, talking to trusted friends and family, listening to a sermon or seeking professional help – but then it also takes doing something really hard. And that something is stopping or turning from the very thing, person or situation that is causing you pain or confusion. Taking the action to change something WE are doing is never easy, but it some cases it can be life changing.
Getting out of – or healing from – a difficult or traumatic time in your life is never easy – but all things are possible with God. I look forward to chipping away at distancing myself from this hard time in my life with God and the people who love me by my side, and yes, with some good and healthy food made with lots of garlic.

Oven Roasted Garlic Cauliflower
Ingredients
- 1 large head cauliflower cut into 1-2-inch pieces
- 1/4 cup olive oil extra virgin
- 6 cloves fresh garlic roughly chopped
- 1 tsp crushed red pepper
- 1 tsp kosher salt
- 1/2 tsp black pepper course ground
- 1 tsp parsley (for garnish) dried or fresh
Instructions
- Heat oven to 450° F.
- In large bowl, toss cauliflower with most of the olive oil (reserving 1 tbsp for drizzle), and the remaining ingredients (except the parsley).
- Spread cauliflower out on baking sheet and drizzle with remaining Tbsp of olive oil.
- Bake for 10 minutes, turn pieces over and then bake for another 10 minutes.
- Garnish with parsley and enjoy!
