I had extra marshmallows and semi-sweet chocolate chips and had a kind-of-healthy, kind-of-not oat bar vision. My little four-year old twinnies were around today so I had a good excuse to make them. I wasn’t going to blog about these, but they turned out extra good and I really loved the oat base that could defintely be used with any topping you want. For example, instead of using marshmallow and chocolate chips, you could definitely use jam, or chopped apricots and nuts, or chocolate chips and coconut, etc. They also have a good dose of whole wheat flour and oats which I think is always a good thing. Anyway, here’s the recipe.
Chocolate Chip Marshmallow Oat Bars
Servings: 12
Ingredients
- 1 1/2 cups rolled oats
- 3/4 cup whole wheat pastry flour or white whole wheat
- 3/4 cup all purpose flour
- 2 sticks butter room temperature
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup mini marshmallows
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350 F. Grease and flour a rectangular baking pan. Add both flours, salt, baking soda and oats to mixing bowl and stir together.
- Add butter and vanilla extract and beat with electric mixer for about a minute. Add the sugar and beat some more until the mixture is crumbly. It should *not* come together like most batters.
- Pour a little more than half the crumbly batter to the bottom of the baking pan and spread evenly, gently pressing (really gently). Bake for about 15 minutes or until very light golden brown.
- Remove from oven and sprinkle marshmallows and chocolate chips across the top.
- Top that layer with the remaining batter, gently pressing again, paying attention to “tuck” the marshmallows a bit since they can get a little crispy if they are poking out (not that it’s a bad thing).
- Bake for another 15 or so minutes until golden brown. Let cool and cut in squares.

i’ve made these once, and they were amazing! i’m making them a second time, and i noticed that it says baking powder in the ingredient list, and baking soda in the instructions. i can’t remember what i did last time, so i’m going with baking powder and keeping my fingers crossed. can you please verify which ingredient is correct?
