Warm summer nights deserve something a little more refreshing than ice water. Tonight was a good night for something light, sweet, cold and flavorful. All I did was smash a few slices of a fresh, juicy peach with about four fresh basil leaves with a mortar and pestle. I added a large spoonful of that mixture to a tall glass with the juice of two lemons, and about a tablespoon (or less) of pure, grade b maple syrup. I filled the glass halfway with water and stirred, added several ice cubes, stirred some more and then filled the water to the top. So cold, so refreshing, and the perfect thing to join you in your lazy night doing whatever you like. This would be great on a hot summer afternoon served in a large clear pitcher. The best thing is sthat you can make it just the way you like it. Like it peachier? Add less lemon and more peach. Like it sweeter? Add more maple syrup, or even sugar if you like. Just have it your way! I like the chuncks of peach and the lovely flavor of basil. I’ve never seen this combo before, but I liked it! Happy summer nights to you all!

went to an outdoor festival and had peach basil lemonade and it was great, with a fantastic texture from the peaches.

Love it! I agree with you about how the peach breaks down and adds texture to the drink. I wish summer would never end!
