Sicilian Celery Salad with Lemon Dressing

- 4 celery ribs, chopped
- 1/2 cup fresh Italian parsley, chopped
- 1 tomato, sliced
- 1/8 cup Sicilian or Greek Olives
Lemon Dressing
- 1/4 cup olive oil extra virgin
- 1 tsp lemon zest
- 1 lemon, juiced and seeded
- 2 cloves garlic, crushed or finely chopped
- 1/2 tsp Kosher salt
- 1/2 tsp black pepper, coursely ground
For the dressing, blend all ingredients together in blender or small food processor; set aside.Arrange or toss all salad ingredients together in a shallow bowl. Toss or massage with dressing.
