Cook oats according to package directions; set aside.
In small heat-proof bowl, add chia seeds.
Bring 1 1/2 cups water to a boil; pour over chia seeds. Let cool for at least 15 minutes.
In small parfait cup or mason jar, spoon in half the oats to create first layer of parfait. Drizzle with a teaspoon of honey. Add half the strawberries, and then 1/2 the yogurt.
Spoon about a tablespoon of the chia pudding on top of the yogurt.
Garnish with blueberries, more yogurt, and then sprinkle with cashews and a pinch of raw chia seeds (optional).
Optional: For a sweeter parfait, add a bit more honey between the layers.
